Tuna Niçoise Appetizer Bites

Serving Size: 24 People

Ingredients

  • 1 can or pouch (5 oz each) Bumble Bee® Tuna, drained and flaked
  • 4 medium red potatoes, sliced crosswise 1/8" thick (24 slices)
  • 6 large hard cooked eggs
  • 1/3 cup vinaigrette salad dressing
  • 12 green beans, trimmed, cooked and cut in half diagonally
  • 3 tablespoons sliced black olive (24 slices)
  • Garnish with lemon slices and dill sprigs

Cooking Instructions

  1. Preheat oven to 400° F.
  2. Place potato slices in a single layer on an oiled baking sheet. Bake for 15 minutes. Remove from oven and let cool.
  3. Slice each egg into 6 slices, using center slices for appetizer bites and reserving ends for another use.
  4. Brush potato slices with vinaigrette dressing. Top each potato slice with one slice hard cooked egg, 2 teaspoons of tuna, green bean and black olive.
  5. Garnish with lemon slices and dill sprigs.
