Green Bean Almondine with Tomatoes

Green Bean Almondine with Tomatoes

Ingredients

  • 1 tbsp Butter
  • 4 Small shallots, diced
  • 2 Large tomatoes, diced
  • 2 tbsp Parsley
  • 2 tsp Lemon Juice
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • ¼ c Slivered almonds
  • 1 cn Libby’s® Jumbo-Can™ Cut Green Beans (28 oz), drained

Cooking Instructions

  1. Melt butter in frying pan and add shallots; sauté over medium-low heat until soft.
  2. Add tomatoes, parsley, lemon juice, salt, pepper and green beans.
  3. Mix well and cook until heated through, approximately 2 minutes.
  4. Place mixture in service dish and top with almonds.
