Puerto Rican Fried Rice

Ingredients

  • 1 tbsp. sesame seed oil
  • ½ sliced celery stem
  • ½ chopped yellow onion
  • 1 tbsp. crushed garlic
  • ½ chopped red pepper
  • 2 chopped slices (lean) low-sodium ham
  • ½ cup pink Rico Beans, drained
  • 4 cups cooked long grain Rico Rice
  • Black pepper to taste
  • 2 tbsp. low-sodium soy sauce
  • 2 egg whites
  • 4 sliced scallions
  • 1 tbsp. chopped fresh cilantro (garnish)

Cooking Instructions

  1. In deep pan heat oil over high heat. Add celery and onion. Cook approximately 1 minute. Add garlic, red pepper and ham and cook for 2 additional minutes.
  2. Add the Rico Beans and cook for an additional minute, stirring occasionally. Add the Rico Rice to pan, season lightly with pepper.
  3. Pour in Soy Sauce and mix evenly. Form a well in the center of the rice mixture and add egg whites. Cook for 2 minutes and mix in all of the rice.
  4. Remove pan from heat and add scallions and cilantro and mix evenly. Enjoy.
