Chick Pea and Pork Soup

Ingredients

  • 6 ounces lean pork loin cut in pieces
  • 2 chopped slices of turkey bacon
  • 2 chopped yellow onions
  • 2 chopped sweet peppers
  • 1 chopped carrot
  • 3 tsp. crushed garlic
  • 2 chopped celery stems
  • 2 chopped, unsalted canned tomatoes
  • 1 cup unsalted tomato juice
  • 2 cups water
  • 1 cup drained Rico Chick Peas
  • 2 chopped cilantro leaves
  • 1 tsp. thyme
  • 1 tsp. oregano
  • Low-Sodium salt and black pepper to taste

Cooking Instructions

  1. Heat bacon in deep pot over medium high heat. Once bacon has released its fat, add onions, peppers, carrot and garlic and cook approximately 3 minutes.
  2. Add pork and sear for approximately one minute. Add tomato, tomato juice, water, Rico Chick Peas, cilantro, thyme, oregano, salt and pepper. Cook approximately 10 minutes.
  3. Remove from heat and add the Rico Rice. Enjoy.
