Creamy Clam Bisque

 

Ingredients

  • ¼ cup chopped onion
  • 2 tablespoons butter or margarine
  • 3 tablespoons flour
  • Dash pepper
  • ½ cup dry white wine
  • 2 cans Snow's Minced or Chopped Clams, un-drained
  • 2 cups (1 pint) half-and-half
  • 1 egg yolk
  • Paprika

Cooking Instructions

  1. In medium saucepan, cook onion in butter until tender.
  2. Gradually stir in flour and pepper; add wine and clams.
  3. Cook and stir until thickened; remove from heat.
  4. Blend half-and-half with egg yolk; stir into wine mixture. Heat through. DO NOT BOIL.
  5. Spoon into bowls; garnish with paprika. Refrigerate leftovers. Makes about 1 quart.
