Old Fashioned Cheesecake (FIGURE-FRIENDLY)

Serving Size: 8 servings

Lite and fluffy - this old fashion cheesecake is lower in fat and calories than traditional cheesecake and makes a fabulous finale to any festive moment!

Ingredients

Crust:

  • 1 3/4 cup graham cracker crumbs
  • 1/3 cup butter
  • 3 tablespoons sugar
  • 1/3 teaspoon ground cinnamon


Alternate Crust:

  • 1 1/2 cup ground (food processor) ginger snap cookies (about 33 thin cookies)
  • 3 tablespoons apricot jam melted


Filling:

  • 2 cups 1% Friendship® Lowfat Cottage Cheese
  • 2 (8oz) low fat packages of cream cheese, softened
  • 1 cup sugar
  • 4 eggs
  • 1/2 tablespoon lemon juice
  • 1/2 tablespoon lemon zest (grind)
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 2 cups Friendship® Light Sour Cream

Cooking Instructions

  1. Preheat oven to 325º F. Combine chosen crust elements and press mixture evenly over the bottom and slightly up the sides of a 10-in. spring form pan.
  2. In a food processor, puree 1% Friendship® Lowfat Cottage Cheese; set aside.
  3. In a mixing bowl, beat cream cheese and sugar. Add eggs, one at a time, beating well after each addition. Beat in lemon juice and lemon zest, vanilla, flour, Friendship® Light Sour Cream and pureed cottage cheese just until evenly mixed.
  4. Pour into pan. Bake at 325ºF in the center of the oven for 60-70 minutes or until filling just set.
  5. Turn oven off, open door and let set in oven for 60 minutes.
  6. Remove sides from pan and refrigerate over night. Serve with fresh fruit. Slice with a wet knife.
