Chocolate Cheesecake


Ingredients

Graham Cracker Crust:

  • 1 1/2 cups chocolate graham crackers (about 20 squares), ground
  • 1/2 cup butter melted
  • 3 Tbsp. sugar


Cheesecake Filling:

  • 2 oz. semisweet chocolate squares
  • 2-16oz. containers Friendship® 1% Lowfat Cottage Cheese
  • 8-oz. pkg. low fat cream cheese, room temp.
  • 1 1/2 cups sugar
  • 1 large egg
  • 2 large egg whites
  • 3/4 cup unsweetened cocoa powder
  • 2 Tbsp. cornstarch
  • 1/8 tsp. salt
  • 1 tsp. vanilla extract
  • 1 cup Friendship® Sour Cream

Optional: Whip Cream

Cooking Instructions

  1. Preheat oven to 350 ºF.
  2. Coat 9 inch springform pan with nonstick cooking spray.
  3. Crust: In food processor grind graham crackers until crumbly.
  4. Transfer to bowl, add melted butter and sugar and mix till moistened.
  5. Press crumb mixture into bottom and up the sides of prepared pan.
  6. Filling: Melt chocolate squares in double boiler over hot, not boiling, water till melted then let cool slightly.
  7. Put Friendship® 1% Lowfat Cottage Cheese in food processor and blend until smooth and place in large bowl.
  8. Add melted chocolate, cream cheese, sugar, egg, egg whites, cocoa, corn starch, salt, vanilla to whipped cottage cheese and beat on medium speed until smooth.
  9. Add Friendship® Sour Cream and mix just until blended.
  10. Pour into crust lined pan.
  11. Bake at 350 ºF for 15 minutes, then reduce oven to 325 ºF and bake another 45-55 minutes, or until firm around edge but still slightly soft in the center. Let cool in pan on a rack. 12. Run a knife around the pan to loosen the edges.
  12. Cover and refrigerate until well chilled; at least 8 hours - up to 1 day.
  13. Remove sides of pan.
  14. Garnish with semi-sweet chocolate shavings.

Optional: Top with whipped cream just before serving.
