Friendship D’Litefully Yummy White Pizza

 

Ingredients

  • 1 ready-made pizza dough (or try your hand at the pizza dough recipe below)
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 5 ½ oz. part-skim mozzarella cheese, shredded
  • 3 tablespoons freshly grated parmesan cheese
  • 1 teaspoon chopped fresh parsley
  • 1/4 teaspoon oregano
  • ¾ cup Friendship® 1% Lowfat Cottage Cheese
  • 1 medium, thinly sliced tomato (place on a paper towel to remove excess moisture) 
  • Fresh basil leaves

Cooking Instructions

  1. Lightly coat fingertips with additional olive oil and press and stretch dough evenly on a pizza pan or stone until 10-12 inch round in diameter
  2. In saucepan, heat 1 tablespoon olive oil, add garlic and cook until golden
  3. Brush garlic oil mixture over dough
  4. Sprinkle oiled surface of dough with approx 5 oz of the mozzarella cheese
  5. Bake 10 minutes at 400ºF
  6. Combine parmesan, parsley and oregano and set aside
  7. Remove pizza from oven and drop Friendship® 1% Lowfat Cottage Cheese by 8 rounded piles in a circular pattern onto pizza
  8. Sprinkle with parmesan mixture
  9. Top with tomato slices & fresh basil leaves
  10. Sprinkle remaining mozzarella cheese over top
  11. Bake 10 -15 minutes longer at 400ºF or until desired
  12. For variety, add toppings such as fresh baby spinach or red pepper flakes.

Optional Homemade Pizza Crust: 1 cup warm water (warm meaning warm to the touch but not hot) about 110F 1 packet dry yeast 3 cups all-purpose flour 2 tsp sugar 1 Tbsp olive oil Mix very well.Then allow the dough to rise covered at room temperature until it doubles in volume, about an hour. Form into balls and roll into a crust. Prick with a fork and bake 10 minutes in a 350F oven. Makes 2 12-inch crusts that are about 1/4 inch thick.
