Spring Chicken Mix Salad

 

Ingredients

  • 1 can of nibblet corn
  • 1 cntr. cherry or grape tomatoes
  • ½ cup walnuts
  • ½ bunch scallions
  • 2 shallots (diced)
  • 1 sprig rosemary
  • cilantro (to taste)
  • ¼ cup green olives (finely chopped)
  • 2 chicken breasts (cubed)
  • olive oil
  • kosher salt and crushed pepper (to taste)
  • oil & vinegar dressing

Cooking Instructions

  1. Before you cook the chicken, make sure you cube your chicken into ½ inch square pieces.
  2. Pour olive oil (just enough to coat the bottom) into your frying pan. season the oil with some kosher salt (just a pinch)
  3. season your chicken with some kosher salt and crushed black pepper
  4. on a medium-high light, cook chicken until it is done.
  5. In a large bowl, combine corn, tomatoes, walnuts, scallions, shallots, rosemary, cilantro, & olives. Mix everything together.
  6. After chicken is cooled, mix into bowl.
  7. Season (to taste) with salt & pepper
  8. Drizzle oil & vinegar dressing and mix thoroughly.
