Potato Dumplings with Tomatoes and Onions

Ingredients

  • tablespoon extra virgin olive oil
  • ounces pancetta, finely chopped (1/2 cup)
  • large red onion, finely chopped
  • garlic clove, minced
  • (28 ounce) can REDPACK® PEAR SHAPED PEELED TOMATOES IN PUREE, chopped
  • ½ cup water
  • teaspoon sugar
  • Salt and black pepper to taste
  • Box gnochetti, prepared according to package directions or 1 bag frozen gnochetti prepared according to package directions.

Cooking Instructions

  1. Heat the oil in a large saucepan over medium high heat until hot.  Add pancetta and onion, stirring until onion is golden brown, about 6 minutes.  Add garlic and sauté until golden, about 1 minute.
  2. Add REDPACK® PEAR SHAPED PEELED TOMATOES IN PUREE with juice, water, sugar, salt and black pepper.  Simmer, uncovered, stirring occasionally, until thickened, about 30 minutes. Place prepared gnochetti in serving bowl and spoon sauce on top.  Option:  sprinkle with Parmesan cheese before serving.
