Porcupine Meatballs

Serving Size: 5 servings
 

Ingredients

  • 1 Tbsp butter or margarine
  • 1 small onion, chopped
  • 1 pound lean ground beef
  • 1 cup Minute White Rice, uncooked
  • 1 egg, lightly beaten
  • 1 small packet meatloaf seasoning
  • 1/4 cup water
  • 1 jar (15-1/2 ounce or larger) spaghetti sauce

 

Cooking Instructions

Melt butter in small skillet on medium high heat. Add onion; cook and stir until tender.

Add onions to meat, rice, egg and seasoning packet in large bowl. Add 1/4 cup water; mix until well blended. Shape into medium-size meatballs.

Pour spaghetti sauce skillet. Bring to boil; add meatballs. Return to boil. Reduce heat to low; cover. Simmer 15 minutes or until meatballs are cooked through.

Makes 5 servings.

Serving Suggestion:
*Or substitute ground turkey. Round out each serving with 1/2 cup hot cooked rice and a serving of your kids favorite vegetables
