1 cup Minute® Brown Rice
3 Courtland or Golden Apple Delicious apples
2 tablespoon lemon juice
1/2 cup chopped celery
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup fat free mayonnaise
3/4 cup nonfat vanilla yogurt
Prepare brown rice according to package directions. Cool.
Wash, core and slice apples coarsely, without peeling. Sprinkle apples with lemon juice and toss. Add cooked brown rice, chopped celery, nuts and raisins. Blend well. Fold mayonnaise into yogurt. Add to rice-fruit mixture.
