Nicoise ala Ciliengini Salad-Fresh Mozz & Feta

Ingredients

  • 1 cup Sorrento® Fresh Mozzarella Ciliengini Cheese
  • 6 oz. package of President® Crumbled Feta Cheese
  • 1 pound red potatoes, cubed
  • ½ cup red onion, sliced thin
  • 2 eggs, cut into wedges
  • 1 tomato, cut into wedges
  • 1 cup white beans, drained
  • 1 cup fresh or frozen green beans
  • 1 can white tuna in oil
  • ½ cup olive oil
  • ½ cup red wine vinegar
  • 1 cup pitted kalamata olives
  • 1 tsp. fresh mint, diced fine
  • ½ pound of fresh spinach, washed and dried
  • Salt and pepper, to taste

Cooking Instructions

Cube potatoes into one inch squares and boil until fork tender. Drain, rinse and refrigerate.

In bowl add ciliengini, feta, tuna, green beans, white beans, onions, tomato wedges, eggs, olives, olive oil, vinegar and mint - stir with a fork.

Add spinach and potatoes and toss. Plate and serve.
