Place chicken breasts between two pieces of heavy-duty plastic wrap. Pound with the flat side of a meat mallet to 1/8-inch thickness. Place 1 slice of salami, 1 slice of cheese and 1 pepperoncini on each chicken breast. Fold in bottom and sides. Roll up jelly roll style and secure with toothpicks.
In a skillet, cook rolls in hot oil over medium-low heat for 20 minutes or until tender, turning to brown evenly.
If desired, while chicken is cooking, heat spaghetti sauce in a small saucepan for 3-4 minutes or until hot. Set aside and keep warm. Serve over chicken rolls.
