Chicken Carciofi

 

Ingredients

  • Olive oil
  • 1 pound boneless chicken breast pounded and lightly floured
  • 1 can artichoke hearts
  • 2 cups thin-sliced mushrooms
  • 1/2 cup pitted kalamata olives
  • 1 roasted red pepper, sliced into strips
  • 1 cup sweet Marsala wine
  • Pepper to taste
  • 1 pound Sorrento® Mozzarella Cheese, sliced or shredded

Cooking Instructions

In a large ovenproof skillet, heat a small amount of olive oil. Pan fry chicken until golden brown on both sides.
Add all vegetables and continue cooking on medium heat. When vegetables become soft, add Marsala wine and pepper and reduce heat.
Place vegetables on each chicken breast, top with mozzarella and bake in oven at 400 degrees for 6-8 minutes.
