Grilled Salmon with Ciliengini Relish

Ingredients

  • 4 to 8 ounces skinless salmon fillets
  • Olive oil
  • 1 large tomato, diced
  • 8-ounce Sorrento® Ciliengini Fresh Mozzarella Cheese, sliced
  • 1 teaspoon crushed red pepper
  • 1 clove garlic chopped
  • 1 cup seedless cucumber, chopped
  • 1 bunch scallions, chopped
  • Kosher or coarse salt
  • Freshly ground black pepper to taste

Cooking Instructions

Heat grill to medium heat. Brush salmon with olive oil and cook on both sides for 4 to 5 minutes.

In a separate bowl, mix all other ingredients to make relish.

Remove fish. Plate and top with relish.
