Kugel with Ricotta, Cheddar and Parmesan

 

Ingredients

  • 2 cups Sorrento® Whole Milk Ricotta Cheese
  • 1 cup sour cream
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 (12 ounce) package egg noodles, cooked and drained
  • 1 cup grated parmesan cheese plus 2 tablespoons for top
  • 2 cups grated cheddar cheese
  • 1/2 stick melted butter plus 1 tablespoon for greasing baking dish

Cooking Instructions

Preheat oven to 325 degrees F. Grease 13x 9 glass baking dish with 1 tablespoon butter.

In mixing bowl, whisk together ricotta, sour cream, and eggs until smooth. Add milk, salt, cayenne and noodles, stirring to coat noodles. Mix in cheeses and melted butter.

Pour into baking dish. Sprinkle with 2 tablespoons parmesan cheese. Bake for 45 - 55 minutes or until set and slightly golden on top. Serve hot or at room temperature.
