Mozzarella Stuffed Peppers

Ingredients

  • 1 tablespoon oil
  • 1/2 pound Mexican-style chorizo
  • 1 jalapeno, minced (optional)
  • 1 red onion, diced
  • 1 green bell pepper, diced
  • 2 tablespoons garlic, minced
  • 1 cup basmati or texmati rice
  • 1 cup chicken stock
  • 1/2 cup mild salsa
  • 1/2 cup water
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1½ cup Sorrento® Mozzarella Cheese

Cooking Instructions

In a medium saucepan, heat oil and chorizo, cook for 3 minutes.

Add jalapeno, onion, pepper and garlic. Cook until translucent, then add rice, coating all grains with oil, and cook for 1 minute.

Add all liquids, stir and bring to boil, then cover and reduce heat to low. Check rice for doneness after 20 minutes.
