Easy Mini Cheesecakes

Ingredients

  • ½ stick butter, melted
  • 2 cups granola

Batter:

  • 3 oz. cream cheese
  • 1 Tbsp. honey
  • ¼ cup plain low fat yogurt
  • 15oz. Sorrento® Ricotta Cheese
  • ½ tsp. salt
  • 1 egg
  • 4 Tbsp. strawberry jam

Cooking Instructions

Crust:

Preheat oven to 350 degrees F. Mix melted butter and granola together. Divide evenly into greased 12-muffin tin baking pan.

Bake crust for 8 minutes. Remove from oven. 

 

Batter:

In mixing bowl on medium high speed, mix cream cheese and honey for 1 minute until smooth.

Add yogurt and beat on medium   high speed for 2 minutes.

Add remaining ingredients and mix on low speed until smooth. Divide evenly into baking pan.

Add ½ tsp. jam onto the top of each cheesecake. 

Bake for 18 minutes until set. Add ½ tsp. jam to each for garnish. Remove from oven to cool.

Refrigerate until ready to serve. Run sharp knife around each cheesecake and carefully remove.
