Honey Granola Strawberry Cheesecake Muffins

 

Ingredients

Crust:

  • ½ stick butter, melted
  • 1 cup granola

Batter:

  • 2 ounces cream cheese
  • 2 tablespoons honey
  • ¼ cup plain low fat yogurt
  • 1 (15 ounce) container Sorrento® Part Skim Ricotta Cheese
  • ½ teaspoon salt
  • 1 egg
  • 8 tablespoons strawberry jam
  • Paper muffin liners (optional)

Cooking Instructions

Mix melted butter and granola together. Divide evenly into pan with 12 muffin cups. Bake crust for 8 minutes at 350°. Remove from oven.

In mixing bowl on medium high speed mix cream cheese and honey for 1 minute until smooth. Add yogurt. Beat on medium high speed until smooth, 1 to 2 minutes.

Add remaining ingredients except for jam and mix on low speed until smooth. Divide evenly onto cups. Add ½ teaspoon jam onto the top of each muffin. Bake at 350° for 18 minutes until set.

Remove from oven to cool. Refrigerate until ready to serve. Run sharp knife around each muffin and carefully remove each one from baking pan.
Tip: If using paper liners, carefully remove from pan.
