Crab and Cheese Enchiladas

Cook Time: 30-35 minutes

Ingredients

  • 1 (15-ounce) carton Sorrento® Ricotta Cheese
  • 1 cup Sorrento® Mozzarella Cheese, shredded
  • 1 (10-ounce) package frozen Southwest-style corn and roasted red peppers, thawed
  • 1 (8-ounce) package imitation crab meat, coarsely chopped
  • ½ cup chopped green onions
  • 8 (8-inch) flour or corn tortillas
  • 1 (24-ounce) jar picante sauce
  • Topping Suggestions: Sour cream, guacamole, chopped green onions, sliced ripe olives, chopped tomatoes

Cooking Instructions

In a bowl, combine ricotta cheese, mozzarella cheese, corn, crab meat and onions; blend well.

Spoon about ⅔ cup cheese mixture onto each tortilla.

Roll up tightly and place in a 2-quart oblong baking dish.

Pour picante over enchiladas.

Cover and bake at 350°F for 30-35 minutes or until hot.

Garnish with assorted toppings, if desired.
