Chile 'N Cheese Cornbread


Ingredients

  • Vegetable Cooking Spray
  • 1 cup all-purpose flour
  • ¾ cup yellow cornmeal
  • 2 teaspoons Davis Baking Powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup milk
  • 1 (4.5 ounce) can green chiles, drained
  • ½ cup shredded sharp cheddar cheese
  • 2 tablespoons vegetable oil
  • 1 egg, slightly beaten

Cooking Instructions

  1. Spray 10-inch cast-iron skillet with vegetable cooking spray.
  2. Place skillet in a 425°F oven for 4 minutes or until hot.
  3. Combine cornmeal, Davis Baking Powder, sugar and salt in a large bowl; make a well in center of mixture.
  4. Combine milk, chilies,cheese, oil and eggs; stir well. Add to dry ingredients, stirring just until moistened.
  5. Spoon batter into pre-heated skillet. Bake at 425 degrees F for 20 minutes or until lightly browned.
