Rice and Bean Picadillo

Ingredients

  • 1 cup cooked long grain Rico Rice
  • ½ cup drained kidney Rico Beans
  • 1 chopped carrot
  • 1 tbsp. raisins
  • 1 tsp. crushed garlic
  • 1 chopped yellow onion
  • ½ chopped red pepper
  • 1 chopped celery stem
  • 2 tbsp. chopped cilantro
  • 6 ounces lean ground beef
  • 1 tbsp. red wine vinegar
  • Low-sodium salt and black pepper to taste
  • Cooking Spray

Cooking Instructions

  1. In coated deep pan over medium high heat, add onions, carrot, celery, pepper and garlic. Cook approximately 3 minutes, stirring occasionally.
  2. Add ground meat, raisins and Rico Beans and cook an additional 8 minutes.
  3. Add vinegar, cilantro, the Rico Rice, salt and pepper to taste, and cook, stirring constantly for approximately five minutes. Enjoy.
