Taco Skillet

Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients

  • 1 pound ground beef
  • 6 oz can Mexican style corn (drained)
  • ½ cup water
  • taco seasoning packet (1.25 oz)
  • grated Mexican style cheese
  • ¾ cup corn meal
  • ¼cup all purpose flour
  • 2 teaspoons sugar
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 1 cup evaporated milk
  • 1 egg (slightly beaten)

Cooking Instructions

  1. Preheat oven to 400° F.
  2. Brown ground beef in 10” cast-iron skillet over medium heat until no longer pink; drain. Stir in corn, water and seasoning packet and cook over low heat for 6-8 minutes or until mixture thickens. Top with cheese.
  3. Combine corn meal, flour, baking powder in medium bowl. Combine evaporated milk and egg in small bowl; mix well. Add milk and egg mixture to corn meal mixture; stir just until blended. Spread over top of meat-cheese mixture.
  4. Bake for 20-25 minutes or until wooden pick inserted in center comes out clean.
