Camarones Al Ajillo

Ingredients:

  • 2 lbs Large Wild Caught Raw Shrimp
  • 1 1⁄2 tsp Diamond Crystal Kosher Salt
  • Black Pepper to Taste
  • 1 tbsp Olive Oil
  • 2 tbsp Salted Butter
  • 1 Head of Garlic Minced
  • 1 Lemon
  • 2 tbsp Fresh Parsley

Directions:

  1.  Pat raw shrimp dry then season on both sides with Diamond Crystal Kosher Salt and Black Pepper. Dry brine and let sit in the refrigerator for at least 20 minutes but up to 2 hours uncovered
  2. In a large skillet over medium-high heat, add olive oil. Once olive oil warms up, add shrimp. Cook shrimp for 2 minutes on each side or until shrimp begins to turn color. Remove shrimp and set aside
  3. Now add salted butter and extra olive oil if needed. Add diced garlic and stir. Feel free to add extra kosher salt if needed. Then add shrimp and squeeze fresh lemon juice. Gently toss shrimp in the garlic sauce. Add fresh parsley at the end. Mix together and remove from flame to prevent shrimp from over cooking. Serve and enjoy while hot
