Tortilla Burgers

Bridget Maloney

Ingredients:

  • 6 Mission® Zero Net Carbs Sriracha Ranch Tortillas
  • 12 oz lean ground beef
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 3 tbsp olive oil, divided
  • 1 cup shredded lettuce
  • 1 tomato, diced
  • 1/4 cup diced onion
  • 1/2 cup shredded Cheddar cheese

Directions:

  1. Prepare patty mixture: in medium bowl, stir together beef, chili powder, salt, pepper and garlic powder. Divide into 6 portions and roll into balls.
  2. Press patties into tortillas: Press a beef ball over each tortilla to form a thin patty, leaving a ½-inch border.
  3. Cook patties on tortillas: In large skillet set over high heat, heat 1 tbsp oil. Arrange 2 tortillas, with beef mixture facing down, in skillet. Cook for 2 to 4 minutes or until beef is browned and cooked through. Flip and cook for 1 minute. Transfer to a plate and cover to keep warm. Wipe skillet clean with paper towel. Repeat with remaining oil and remaining prepared tortillas.
  4. Assemble burgers: Top each tortilla burger with lettuce, tomato, onion and Cheddar. Fold to eat like a taco.
