Affordable Fried Rice Meal Prep by @veganbodegacat

Ingredients:

  • 3-4 cups of leftover rice
  • 1 block of firm tofu
  • 1 small can of peas and carrots (or other cubed veg)
  • 1 small head of broccoli, chopped
  • ½ onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons chili sauce like sriracha
  • 1 tablespoon rice wine vinegar (but can use any vinegar on hand)
  • 1 teaspoon pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon turmeric

Directions:

Cook onions and garlic in a pan with olive oil till starting to brown then crumble in tofu. Cook over medium heat for about 5 minutes then add vegetables. Once they are cooked through, add leftover rice and seasonings and keep stirring on stovetop till everything is well-incorporated and heated up. Enjoy!
